Carrot Apple Muffins

I made these muffins so my husband and I had the perfect grab and go snack during our busy week. They're easy, delicious and healthy. Let me know what you think. 

Ingredients: 
  • 2 cups whole wheat flour
  • 1 cup organic coconut sugar
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1 cup shredded coconut (unsweetened)
  • 1 cup shredded apple
  • 2 cups grated carrots
  • 1 cup mixed seeds (I used chia and sunflower)
  • 3 organic eggs
  • 2/3 cup coconut oil (melted)
  • 1 dash vanilla
Directions:
  • Mix all ingredients together.
  • Bake in muffin tins for 30-40 minutes at 350 degrees
  • Makes 18-24
